Fairfield Homestead and its related outbuildings for vine cultivation, wine fermenting and cellaring, are significant for associations with the development of the Victorian wine making industry in the nineteenth century and, through continued production using traditional methods and equipment, demonstrate this way of life.
The Fairfield estate was the creation and home of George Frances Morris, energetic vigneron and promoter of Australian wines who did much both to develop vineyards in the Rutherglen region and to stimulate viticulture in Australia.
